Marie's Passion for Food
A Recipe for Success
Food is a passion within me and I become inspired when working with good products. It nourishes my soul being in the Free State where I have access to wonderful ingredients that arrive in our kitchen from different sources; from our Helen-Joan’s vegetable garden; bought at the fresh produce market by Helen-Joan or plainly from the local butcher.
All the produce gets inspected, smelled, touched, appreciated and respected before we start to transform them. Only then can they be approached with humility.
Food originates from the product. Products come from the soil on which we live. I live at De Oude Kraal, south of Bloemfontein in the heart of the grass plains. My heart, my feet, my food, my family- has its roots here, grows, flourishes and is sustained here. I am proud of the local produce.
Traditional Cooking Methods
Family recipes that work, is worth gold. That which tastes good –works. My approach was to take existing recipes a few steps further and present it in an innovative way.
De Oude Kraal’s food originates from the traditional farm cooking done by generations of families, in other words ‘slow cooking method’ as generally known, but served with a French flair. As I reflect on this I think…Yes, probably a French Flair, but no, actually it is Marie’s flair and it differs every day, as the seasonal products allow, always better and ‘lekkerder’.
A lot of the concepts and ideas of the De Oude Kraal structure and traditions has its origin in my childhood memories of growing up on this farm. Food played a big part in that development.
My grandfather ‘Judge’ Smit always insisted on a sit down meal at a table where the vegetables were served by the servants, not in the silver spoon way, but purely in the self-help way, and yes, today we still do it exactly the same way at De Oude Kraal restaurant.
The sense of taste is one of the five most important components in your life and without it life would be a fifth worse. Experience taste and taste sensations the way I do it and your life is 100% a fifth better.
